Billy & Stacey Dim set out to create the perfect Central Coast Rosé -ideal for sun, fun, and all-day drinking; and we think their second release is gonna knock your socks off!

The Summer Somewhere Rosé program was inspired by the joining of both Billy & Stacey’s two passions: his innovative, Custom Wine Program, Blendtique, and her one-of-a-kind Swim, Ready-To-Wear, and Resort Showroom appropriately named, Summer Somewhere.

The day the two were married Stacey had her heart set on a Rosé, so they agreed to take a portion of their wedding gifts and get to work.

Billy set his sights toward making a true Santa Barbara County Rosé in the Provence-style, and Stacey hoped to capture the essence of summer in a simple, yet elegant package design.

The 2018 Summer Somewhere Rosé is a blend of 70% Foxen Canyon Grenache and 30% Santa Ynez Valley Cinsault.  Light, crisp, beautiful, and clean: the new Summer Somewhere Rosé program is quickly becoming a focus for the Dim’s; and as they look toward the future, plans are in place to boost production in 2019!

Summer Somewhere is one of the first Santa Barbara County Rosé programs dedicated to growing fruit solely for Rosé. In other words, you’ll find no Saignée-style winemaking here. The Dim’s believe true Rosé has an expression all its own, and should be treated as such.

Grenache for the program was sourced from Demetria Vineryard in Foxen Canyon and picked at 19.5 Brix to maintain balanced acidity and an underlying minerality.  The Grenache presents subtle aromas of teaberry and watermelon with integrated flavors of white peach, star fruit, and meyer lemon.  The Cinsault -sourced from Camp 4 Vineyard in Santa Ynez- was picked at 20.5 Brix to add layered notes of rose petal & watermelon to the aromatic and a slight fleshiness to the mouth-feel creating a balance of flavor and taste.

The Rosé was neutral barrel aged in French Oak Casks for 7 months, finished dry, and cold stabilized in stainless steel for 8 weeks before filtration & bottling.
